Youngest son and I started with the recipe on the Philadelphia cream cheese package and went low fat and sugar free on it.

We had so much fun making it.

I don't think I've ever made cheesecake from scratch before. It would have been a fast procedure if we hadn't been having so much fun with it.

We tasted the batter and, OMG, it's so GOOD.

I'd bought a graham cracker pie crust for it since it had less sugar than the actual crumbs you can use to make your own and I could pick it off if I didn't want it.

To our surprise, we had a LOT of the batter left over after we filled it.

So we pulled out one of the deep dish pie crusts I had in the freezer and FILLED it up too.

Wow, we have cheesecake to spare!

I will definitely do this often since it's so easy.

It's cooking now, then has to go into the fridge for 4 hours and will be ready right about when we're ready for it, I'm guessing.

What kinds of yummy things have you folks cooked for Christmas?

We decided to get a honeybaked ham this year, then we're having all the old timey standards like that green bean casserole and yams from scratch with walnuts and etc. For dessert, homemade pecan pie with Haagen Dasz vanilla ice cream. The lo cal starts after the holidays. :-)

Eggnog cheesecake and cranberry pumpkin bread w/ orange glaze. My mother made the main meal--ham, turkey, and traditional trimmings.

I made Baklava earlier in the month, but Christmas dinner wasn't a big deal for me. [profile] nightwolfwriter and I went over to a friend's house this year. She wanted me to bring appetizers and/or a salad, so since there were a lot of kids in attendence, I made a sweet cheese ball, and bought a sharp cheddar one and one of those Veggie trays with ranch dressing, and lots of crackers. I even went out of my way to make the cheese ball (recipie here) more healthy by using the fat free cream cheese, sugar free pudding, and fruit cocktail in pear juice instead of heavy syrup. ;-)

It's been an odd sort of Christmas this year--no tree, not a lot of cooking... At least the presents stayed the same! ;-)
